Smoked Salmon on Grilled Tuscan Bread with red onion & caper aioli

This is a perfect summer sparkler. Made in the champagne method utilizing free run juice and allowing the secondary fermentation to take place in the bottle, Domaine Ste. Michelle’s winemaker, Rick Casqueiro has crafted a delicious and affordable sparkling wine. With appealing aromas of lemony citrus fruit in the nose, this clean and crisp wine has delicate bubbles and a lively tropical fruit finish to it. It was delicious when paired with the Smoked Salmon on Grilled Tuscan Bread. The salmon was served on top of a red onion and caper aioli.

Asparagus & Lump Crab Crepe with Goat Cheese & Cilantro Crème Fraiche

Chardonnay -- Grand Estate – Columbia Crest
Just when we were starting to get tired of “same old… same old Chards” we popped the corks on this winner of a wine. Ripe fruit scents of Granny Smith apple, melon and toasty caramel invite you to really enjoy this wine. Full bodied, but not too heavy for summer sipping (is it really summer? 52f while I am writing this) the Grand Estate Chard is worthy of its moniker. It held its own against the full flavored asparagus and crab crepe.

Wild Mushroom Fettuccine Alfredo

Paired with:

Merlot -- Grand Estate Columbia Crest
This wine is a blend of primarily Merlot, with a little bit of help from the Cabernet boys, Sauvignon & Franc. It is aged in French oak barrels for about 14 months and it shows. Black fruit scents with a touch of cocoa lead to a smooth, silky mouth-feel with subtle oak notes in the finish. I wanted to have seconds on the Fettuccine,
but the ghost of Dr. Atkin's kept telling me NO!

Stuffed Leg of Lamb with Sweet Potatoes Anna

Meritage - - “Walter Clore” – Columbia Crest

When Walt Clore started talking about the possibilities of wine growing in Washington, he was called crazy by some and eccentric by others. Now he is regarded as a genius :) This is a Bordeaux style blend that is downright delicious. The small lots of wine that are gathered from some of the oldest vineyards controlled by Columbia Crest and are treated carefully by the winemaker. Lots of berry aromas in this wine; black cherry, ripe red raspberry…you get the drift. There is a dash of mocha-oakyness that is to die for and a well balanced, complex and lengthy finish. This really set off the lamb in a nice way.


Reserve Syrah – Columbia Crest


Ray Einberger, winemaker, has utilized fruit grown in three areas to their fullest advantage. The grapes in Wahluke Slope are used for their texture and complex body; the fruit from Yakima Valley for their aromatics and grapes from Horse Heaven Hills for their backbone. Once again, winemaker Ray Einberger has done something interesting. He has taken the grape of the Rhone Valley, Syrah and hit it with a little Viognier (the white grape of the Rhone) and with it has created a wine in the style of Cote Rotie. 9% Viognier goes a long way in adding beautiful nuances to the remaining 91% Syrah. With scents of orange and peach from the Viognier, the hints of cocoa and crushed raspberries counter balance the earthy tones in a nice way. This also paired extremely well with the lamb.
